Simply Potato Skins

Potato Skins
Happy Friday!  It's Football Season and snacks are on the menu.  Today, we will share our recipe for potato skins.  The key is to deep fry the skins in oil before you add the cheese and bacon.




Ingredients:

3 Medium Potatoes
Shredded Cheese
Bacon Bits
Sour Cream

1.  Wash and then wrap the potatoes in aluminum foil. Bake in a preheated oven of 375 F for 1 hour-1 1/2 hours.

2.  Remove the potatoes from the oven and discard the aluminum foil.  Allow to cool 10-15 minutes.

3. Cut the potatoes in half and scoop out the centers to make a bowl.  Make sure not to scoop all the way to the skin.  You want to leave some of the potato on the inside to hold it's shape.

4.  You will fry the potatoes in oil for 3 minutes in a deep fryer (or deep skillet) at 350 F.

5.  Place the potatoes on a baking sheet and fill with cheese and bacon.

6.  Put the potatoes back into the oven and broil them until the cheese begins to bubble.

7.  Remove from the oven, add some sour cream and enjoy!

Simply Fall Planting

The cool crisp nights are starting to creep in us, so it's time to prepare for Fall.  I love this time of year. The harvests are almost done and we are beginning to look ahead for next year's spring.  It may seem unusual, but now is the perfect time to begin planting. You may think it strange, but the ground temperatures are perfect to plant your new trees and shrubs.  In the spring, the ground is still warming to optimal temperatures, so planting in the fall allows the roots to start developing immediately. You will also want to plant your spring bulbs. If you have Irises and/or Hostas, now is the time to divide them.  Peonies are best transplanted in the Fall as well.  Keep in mind that you will still want to water the plants regularly until the ground begins to freeze.  A few other benefits of Fall planting is that the bugs and pests are starting to dwindle, and the weather is usually not as volatile as the Spring.

Simply Homemade Salsa

Homemade Salsa
Hello everyone!  I have a really easy recipe for you today.  The growing season is coming to an end and we are harvesting the last of our crops.  If you are like us, you probably have a ton of tomatoes and peppers. I have used them for salads, sandwiches and canning.  Now, we are using them for homemade salsa!




Ingredients:

4 C - Chopped Tomatoes
1/2 C - Chopped White Onion
1/2 C - Chopped Green Bell Pepper
1/2 C - Chopped Sweet Banana Pepper
1/3 C - Chopped Cilantro
2 TB - Lime Juice
1 TB - Ground Cumin
2 Tsp - Sugar
2 Tsp - Garlic Powder
2 Tsp - Cayenne Pepper

You will just need to combine all the ingredients into a mixing bowl and mix thoroughly.  That's it!  How simple, right?  Enjoy!

Simply Fall Decor

Corn Stalks
I hope everyone is having a great week.  We are going to discuss fall decor today.  I know, the heat hasn't gone away yet, but we cross the unofficial line into fall after Labor Day.  While we finish up our gardens and get ready for fall plantings, make sure to think about what you can save from the garden for decorating. I always like the dried out corn stalks, so I made sure to keep all mine this year.  Also, I planted a small patch of cotton this year. I love the look of them when they dry out and have all those puffy balls of cotton poking about the limbs. If you thought ahead this year and planted gourds and pumpkins, you should be coming up on the perfect time to harvest them. You can also dry out some vegetables like okra.  Just look around your yard, even some of the wild and unruly plants can offer some interesting decor around your home.  We have thick and twisted trumpet vines, so we usually cut them up and use them for our Halloween themes.  Trees are another great source to think about. The leaves haven't started changing colors around here, but don't forget to collect them when they do.  So let out your creative side and see what you can come up with.

Simply BBQ Rib Prep

I hope everyone is having a great Friday!  Today, we have a prep tip for grilling ribs.  I know it isn't exactly a recipe, but it's still food related.  It seems that everyone is always trying to find an easy way to make bbq ribs without over cooking them. We learned this trick from our friend's that live in Lebanon, TN.  First, you will simply marinade your ribs with your preferred recipe for 8 hours.  The next step is the trick for tender ribs. You will boil them for 45 minutes on the stove.  Next, you will slather on your favorite bbq sauce and grill them for about 3-5 minutes on each side.  It's really simple and makes for a tender rib every time!

Simply Re-Purposing Materials

I hope everyone is having a great week!  Today, I am going to tell you about some re-purposed materials we used for gardens.  The materials came from a friend's property that was going up for sale.  They used to have an asphalt tennis court, but had decided many years ago that it was no longer needed.  Instead of just destroying and dumping the court, they broke up the pieces and used them as the border for a raised garden.  We loved the idea so much, that we agreed to take the asphalt pieces for our own raised beds.  Why spend hundreds, if not thousands, of dollars at the local box store for brick or stone, when you have a durable material at your disposal?

Our friend also had several cedar posts that they were not using, so we took those to use as border fencing as well.  We simply cut the posts the same length and stacked them on top of each other two pieces deep. Then, we drilled holes at the ends and hammered Rebars (each 2 feet in length) into the ground to hold them in place. It was incredibly easy to do, and the borders match the overall feel of our log home.

I love having friends that share their creative ideas, along with their extra materials which would have otherwise gone to the dump!  It just goes to show that the more you give, the more you receive.  For this reason, I always encourage people to share their abundance with those around you.  It can be food, clothing, shelter or any number of things.  You don't have to necessarily find someone in need, since a gift of kindness is just as important.
