Simply Carrot Cake !

Carrot Cake

I love carrot cake it has to be one of my favorite cakes in the world, here is my family's recipe. I love finding old recipes, especially when they are hand written in my grandmother or mom's writing. After my grandmother passed we lost a lot of great recipes I want to remind my readers to get those family recipes in writing so you can have them for years to share.

Here is what you will need:
(makes 2 loaves)

Cake
2 cups sugar
3 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
2 cups grated carrots
1 1/2 cups vegetable oil
2 eggs beaten
1 cup chopped walnuts
1 cup crushed pineapple drained
1 tsp vanilla extract
1tsp lemon juice
1/2 tsp almond extract

Frosting

4 ounces butter
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract

To make the cake combine the dry ingredients into a mixing bowl and mix evenly, then in another mixing bowl combine all of the wet ingredients and mix evenly,  slowly add the dry mixture to the wet mixture until evenly mixed. Place in a buttered pan and cook at 350F for one hour.

To make the frosting combine all the ingredients and mix evenly, spread on the carrot cake when warm.
